As the weather gets cooler, I long for days of fireplaces, snow bunnies, and a piping hot soup over the stove waiting for them when they come in.

I, personally, am not a big fan of the colder weather. I will go out for a few minutes and then I am right back in planning fun indoor activities for when the kids decide they want to join me.

Either way, while I am planning, I am normally making soup. Not quite Campbell’s but it melts them down too and the recipes taste even better, in my opinion.

Kristin at Yellow Bliss Road came up with this recipe that was asked for over and over again by my students last year. As a matter of fact, I did make it a second time at the end of the year and they loved it equally as much in the hot weather as they did when it was cold.

I’m not sure what type of tortellini they state we should use but I opted for three cheese both times. It was a winner and will be made again either this December or this January with my new culinary kids.

We have already made potato soup this year. My students have all been big fans of potato soup so I gave them the okay and they whipped up a batch.

The flour was substituted with cornstarch so that our gluten-free student could eat some as well. They also added sour cream to the top of the soup as well. It really brought out the loaded potato flavor of the soup.

I do love that Wendie at Butter Your Biscuit adds carrots and celery to her recipe as well. It adds a delicious flavor and sneaks in some vegetables to those who don’t like them.

My mother was the one who gave me my love for cooking. I remember her trying out new recipes and my brother giving her the thumbs up or down. I also remember Sunday lunches after church. My favorite, naturally, was when we ate at Pizza Man.

Yet those are not the ones that I really remember. Instead, I remember simple vegetable soup paired with peanut butter and jelly sandwiches.

This recipe is hearty and hits the spot in a way that not many other soups do for me. I tip my hat to Jordan’s mother for coming up with this recipe and Jordan as well, for posting it on her blog- Smile Sandwich.

Elise Baur wrote this recipe for Simply Recipes and yet it brings me back to, not my childhood, but my young adult life shortly after I got married. My mother in law would make this because she could get the ingredients for cheap. My husband did not like it.

Yet, I remember it just like Elise mentions- it got better as the days went on. I would eat this for lunch on day two and three. It soothed the soul.

While my family does not eat this now, I would stand to take two-day-old ham and bean soup any time.

This recipe is one that was created after several different trial and errors by Sally from Good Dinner Mom.I give her mad props too because I am the same way. She started her quest because she got mediocre soup from a restaurant that was known for their French onion soup, so she set out to find a recipe that truly satisfied her.

The test kitchen provided and all is well. Now we, too, can make, prepare, and eat the best French onion soup out there!

I chose this recipe because sometimes even with snow days, us ladies get busy- there is always stuff to do around the house. Laundry to fold, rooms to clean, presents to wrap, or movies to watch curled up with our loved ones.

If that is you then this soup might be the answer. I like that Holly from Life in the Loft Housegave us options for our cheese. I am not a big fan of processed cheese and almost decided not to post this one when I saw that she recommended using Velveeta Cheese. Thankfully though, she added we could use equal amounts of cheddar if we chose.

I’ll stick with the good stuff and this one is a winner!

This tomato basil soup is not like other ones that we see. Instead of using creamer, Karina at Cafe Delights opts to use potatoes to give it the rich, thick flavor. This is great for people who are lactose intolerant or are avoiding dairy products.

After reading Tomatoland though I have to give the note that you really do want to use a local tomato if you can, preferably one that came from your backyard and you canned. I am surprised and appaled that the stuff brought up in this book still exists in America and I can assure you I will not purchase a cheap, tasteless tomato.

This soup is not a recipe I have tried before but one that I will be trying later this week. When doing my research for this post, I stumbled upon this recipe and thought it looks too good not to try. My students recently made a beer cheese soup and it was delicious. Sara from A Flavor Journal did a great job of taking our humble dipping sauce to a whole different level.

Adding the bread bowl bring even more to the recipe, though when I make mine I think I will make it a pretzel bread bowl because I feel that pretzels sit better with beer cheese than does traditional bread.

You want word that this is good? Sara notes that it came from a sous chef where she used to work, and that she begged him for the recipe. Still keeps it on her phone to this day. It has to be good stuff! Yes, defintely trying it this week… might bring my students in on the fun too!

Everything about this recipe is great, except for the potatoes. I would either get rid of the potatoes or blend them in using an immersion blender. Other than that though, everything looks delicious. I love bacon and cheder added to this recipe.

Since I added this corn chowder to the recipe list I figured I would go ahead and explain the difference between a soup and a chowder. It’s the thickness. A soup is typically a bit runnier while a chowder is thicker. Also thicker is a bisque and the only difference between a bisque and a chowder is that a chowder is chunky and a bisque is not.

I wonder if that means I would rather have corn bisque?

Remember how I told you that my mother would make random recipes and my brother and I would give her the thumbs up or thumbs down? There are only two recipes that I know she made that I thumbed up and asked for so much she probably got sick of hearing me ask for them.

The first was a pasta dish that had pepperonis, black olives, olive oil, and parmesean cheese. It still is the most refreshing summer cool off dinner in my opinion.

The second was this pizza soup with a side of cheesy garlic bread. The mushrooms and other ingredients make it so delicious I promise you will be coming back for more!

Amanda over at Moms with Crockpots came up with this baby that really packs in a punch. It combines so many of the great ingredients we know and love in our stuffed peppers.

The recipe only has two bell peppers in it and even then they are diced small so if you really like the pepper portion of your stuffed peppers, I recommend adding a few more.

The tomato base really makes you feel as if you are getting all warmed up. It reminds me, somewhat, of chili.

Beth’s Budget Bites takes me to a place I love to go. My husband came up with a similar recipe- one that used buillon cubes and less vegetables but this one is a bit more my taste. I love making my own chicken stock. Occassionally we will purchase a rotisserie chicken from Walmart and the leftover chicken bones go into a pot to make chicken stock.

My honey makes it a little different- he adds all the ingredients and lets them cook for a little while before he adds the noodles right towards the end. I have to agree though, the egg noodles are the way to go with this soup.

I have to tell you all a big secret. I hate the word diet. So I was pleasantly surprised when I came across this recipe by Brooke Lark. You see, when I first found blogging in 2009, I read her blog (along with the Pioneer Woman) like it was going out of style. I even won a gift set to make my own oatmeal creampie from Brooke.

Then life happened and I stopped reading her blog. A few years ago I went searching for it and she had turned it into a health blog that focused on diets. I was so sad. I loved her original style. As life would have it, I found this parmesan pasta soup and thought it sounded sinfully delicious. So much so that I wanted to share it with you.

Oh my gosh, I think we have hit the motherload. How perfect would this soup be for a fall or winter light lunch? I really wanted to use arecipe by Kevin Lynch and am blessed to say I think I found the best one. I almost feel like this soup could be used as a warm breakfast soup as well. With the granola, it would be perfect.

His recipe creation came from an apple pie he ate that had cheddar cheese in it. Something I never would have thought of but apples and cheese does go well together. He did a great job of representation as well- the walnut granola represents the crust and he used cream to represent the ice cream that goes along with the apple pie. What a creative, delicious idea!

My oldest daughter has a thing for goulash and this soup reminds me of the spaghetti like dinner she enjoys. The elbow macaroni, tomatoes, and beef really hit the spot. The carrots, corn, and runniness of this recipe are what turn it from goulash into a soup. Using fresh herbs really bring out the taste of the tomatoes in the soup.
